Easy Challah French Toast with Mascarpone Blueberry Casserole

Equipment

  • 9x13 pan
  • Mixing Bowl/Whisker
  • ¼ measuring cup

Ingredients
  

  • 1 Loaf Challah Bread used Trader Joes
  • 10 Eggs
  • 1 tub Mascarpone Cheese Used Trader Joes
  • ¼ cup Lakanto Original Sugar
  • 2 cups Almond Coconut Milk Used Silk
  • 1 tbsp Vanilla Extract
  • ½ cup Blueberries
  • ½ tbsp Cinammon
  • Lakanto Powdered Sugar to dust over
  • 2 tbsp Four Roses Bourbon
  • Butter to prepare pan

Instructions
 

Preparation:

  • Cut Challah bread into 1 inch cubes.
    2. Spread them evenly in a buttered 9x13 pan.
    3. In a mixing bowl whisk 10 eggs, milk, vanilla, sugar and cinnamon and bourbon.
    4. Mix mascarpone cheese into egg mix, it will be crumbly.
    5. Pour over bread, make sure all the bread get soaked.
    6. Top with blueberries and sprinkle more cinnamon.
    7. Put in the refrigerator overnight. (you can also cook this immediately)

Cooking:

  • 8. Preheat oven at 350 degrees.
    9. Bake covered with foil for 30 minutes.
    10. Remove foil and cook for addition 20 mins or until toothpick comes out clean.
    11. Let it rest for 10 minutes in the counter.
    12. Dust with powdered sugar and serve.
    13. Enjoy!
